People come from all over France to experience the culinary delights of this region. With a landscape distinguished by forests, rolling vineyards, fields of grain, small farms, and centuries of history, it’s not hard to imagine how the cuisine came to be as magnifique as it is. Because of the presence of the forests, wild game such as pheasant, boar, rabbit, and venison are commonly found on menus. Each town has its own brand of cheese, with Brie being the star; make sure and sample “Brie de Meaux” and “Brie de Melun” if you have the opportunity. And what would a French meal be without desert? Niflettes, the region’s delicate sweet treat, are made with layers of buttery pastry crust and cream. A tradition that dates back to the time of medieval inns, many of hotels and hostelleries also boast gastronomic restaurants that draw diners from miles around as well as serving hotel guests. Many menus feature prix fixe menus that vary in price and quantity. This really is the best way to experience French cuisine, as the courses have been prepared to complement one another. Bailly Romainvilliers
After a long day on the golf course, relax at Domaine De La Brie with their artfully prepared dishes and flashy cocktails. The renowned Auberge de la Brie has a stylish, contemporary dining room but cuisine that exemplifies the best of the regions culinary traditions.

Provins

Provins is famous for its “Rose de Provins,” a flower brought to the city by Thibaud IV, Count of Champagne, after one of his expedition during the crusades. You will find a number of jams and candies made with it, that also make excellent souvenirs and gifts. If you need a break from touring the numerous monuments of this historic city, stop in at Le Dôme. Located in the heart of the old town, this brasserie style cafe has snacks and ice cream in addition to their full menu, and outside seating with views of Basilique Saint Quiriace (Saint Quiriace Collegiate Church). Hostellerie Aux Vieux Remparts's restaurant is one of the best in the area, and draws people from all around with its exceptional traditional cuisine. If you wish to keep with the medevial theme of Provins, try La Table Saint-Jean. Both the atmosphere and the cuisine with take you back to a time of knights and ladies.

Melun

Farm house turned restaurant La Table Saint Just is a romantic countryside gem, their traditional menu remains hearty despite its modern twists.
Enjoy live jazz at l'Estaminet de la Ferme while enjoying the house specialty, croustagnes that resemble mini pizzas.

Meaux

Just steps away from the cathedral, la Taverne de Maître Kanter is an excellent place to stop in for a pint and hearty meal. If you're looking for something outside the norm, add some spice to your culinary exploits and try la Saveur Creole, with a colorful menu full of specialties from Martinique and Guadeloupe.

Fontainebleau

In Barbizon, the dark wood and stonework of Hôtel Restaurant Les Charmettes are reminiscent of a forest cottage. Dine on Delicacies such as Escargots de Bourgogne at Le Caveau des Ducs, while steeping in the elegantly rustic elegance of the 17th century dining room that was once a wine cellar. Enjoy a gourmet traditional meal at Hostellerie de la Dague on their shaded terrace during the summer, or inside by the fireplace. For a truly fresh and authentic dining experience, travel outside Fontainebleau to Ferme Auberge de la Recette, a working farm and inn. Cheeses, vegetables and meats fresh from the fields to the table. Southwest of Fontainebleau is Le Moulin de Flagy, restaurant located in an old mill. Dine next to the river on their outdoor terrace, feasting on elaborate traditonal and regional French fare designed to suit distinguished palates.

Moret-sur-Loing

Situated alongside the Loing River, Auberge de la Terrasse has a fresh menu that changes weekly. Elegant, traditional cuisine is the theme at Hostellerie du Cheval Noir, where the dining room feels like an art gallery. Le Relais de Pont Loup adds modern fair to a traditional menu, with items such as “Pastilla de Pigeon” and seasonal rabbit dishes.

Nemours

An excellent option for large groups and families, Auberge de l'Avenir has a delectable selection French favorites, most of which are organically grown and raised. They also host events, and have a selection of regional organic products for sale.

Reims

Château Les Crayères is fine French dining at its best, and what better backdrop than the magnificent Chateau and grounds. A bit pricy, but well worth it for this opportunity to dine like royalty. Another oppoulent option is Chateau d’Étoges, where the restaurant and estate will take your tastebuds and your imagination on a fantastical journey. In town, try the stylishly art deco Brasserie du Boulingrin. Le Foch has been a favorite for years, with fresh seasonal ingredients and specialties like Fried Calf Veal Sweetbread with Foie Gras. La Table Anna in the center of town serves up regional dishes made with local ingredients.

Épernay

Whether or not you are staying in their hotel, the award winning restaurant at Les Berceaux is worth a visit. First class cuisine bourgeoise and the region's finest champagnes in an elegant atmosphere make this a top destination.
