Confusion runs rampant as to the source of the name, but the last day of the year, known as New Year's Eve to Americans and British residents of Tel Aviv, is known as "Sylvester" to Israelis and many Europeans. Some scholars believe Sylvester was a Catholic saint, other theories abound. Regardless, the holiday is celebrated with the traditional midnight toast, and a common dish for supper is lamb stew with prunes. Don't look for public events, but many restaurants and hotels will offer special packages for the evening.
