This tradition, which dates back to the Middle Ages, was originally designed to celebrate the Bazadaise breed of oxen, a herd of which is paraded through the town of Bazas on the Thursday before Mardi Gras. The full day's worth of activities is centred around Place de la Cathedrale, and the party really gets going around 7p, when local celebrities and officials are introduced, a huge feast is served and the people of Bazas dance long into the night.
